It is more of a technique of cooking than a way of cooking. However, It is the best way to trap aromas in foods.
When you cook, if you smell a great aroma, then a lot of the aroma has escaped into the air.
Few people know that aromas can be retained and actually intensified this way.
In fact, what we experience as the flavor is the mix of taste on your tongue and the aroma experienced by your nose, what we perceive as taste is 70-90% aroma.
I am yet to confirm whether this type of cooking is available in India. But, a friend of mine in Canada told me that chicken cooked in a sous-vide way is mind-blowingly incredible.

It will transform home cooking in ways that the microwave could never have imagined.
So will this really revolutionize Indian home cooking? If we’re to believe we got to wait and watch.
